# serioussandwich MY Cookbook winner is.... and Tamale Bake for dinner

Well I want to start off and apologize, its been a busy couple days alot going on, with kids, work..etc...I need to clone myself . But I wanted to first off say Thank you to my First winner who graciously declined the prize, not because he didn't want the book, its because he liked what he saw and already pre-ordered it off Amazon.com so....Thanks Tony Carlini for reading my blog, and being a great friend. Tony is a firefighter in Itasca Illinois, and on his off time he sells Marion Fire Apparatus. Ive spent alot of time with Tony as he sold us our new Engine in Northlake where I work full-time, and I was part of our new engine specification committee. I used a website that logged all the entries for me, and all I did was hit a button to pick the winner at random and Tony was picked.... after contacting him, he graciously said to pick someone else... So Thanks Tony for everything!!!

What have I made recently...well I opted for a quick meal the other night, with the family, and yesterday was leftovers...at work...its been busy so...

Tamale Bake

2 boxes Jiffy Corn bread mix
2 cans of creamed corn
2 eggs
2/3 cup of milk
3 tablespoons of honey

1-2lb of ground beef
2 cans diced tomatoes for chili
1 can stewed tomato's
2 tablespoons Albukurky BBQ Rub
1 table spoon brown sugar
1 red pepper diced
1 yellow pepper was diced
1 onion diced
1 tablespoon of EVOO

preheat oven to 400 degrees

I diced the peppers and onions and sauteed them in evoo, and then added the ground beef, once brown I drained the fat, then added the bbq rub.to the pepper,onion beef mix, add the tomato's
the brown sugar, heat up to a bubble.

mix the corn bread mix, 2 eggs, milk, honey, and creamed corn.

take a 9 X 13 spray with pam, add the pepper,onion,tomato, beef mixture, into the pan, then and pour the corn bread mix over the top.

bake for 30 min @ 400 or until the corn bread you stick a toothpick in and it comes out clean.

I served it with a dollop of sour cream on top.

Its very quick and easy! and extremely tasty
