As you all know I have been working through Emeril's new Kicked-Up Sandwich Cookbook due out 10/16/12 remember you can pre-order it here or enter on my blog, my Facebook or my twitter to qualify to win a copy from me. Well I made lunch for my shift today and gave them the treat of Emeril's Grilled Spinach and Artichoke Dip Sandwich, and I also made a fresh homemade tomato basil Bisque as a nice side.
The Roasted Tomato Garlic Bisque was a creamy delight...
5lb of assorted tomatoes I used vine ripened, and Roma's
2 garlic heads peeled
2 cans of fire roasted diced tomato's
salt
pepper
EVOO
Balsamic Vinegar
box of Veggie Stock
Fresh Basil
Small container of Heavy Cream
Cracked red pepper -Optional
I quartered the tomato's and added the Garlic into a bowl, drizzled Extra Virgin Olive Oil, and Balsamic Vinegar over them some salt and pepper mixed lightly. to completely cover the tomato's and the heads of garlic. I then placed them on a cookie sheet lined with foil and threw them in the oven that was preheated to 350 for about 40 minutes. they softened nice and the tomato's started to brown.
I took them out and threw the tomato's and garlic and oil into the blender and blended on high for 2 minutes. and then poured it into a stockpot on a low heat, I then added a box of veggie stock to rinse the blender and get the bits of tomato and garlic, I added a hand full+ of fresh basil and blended that for 2 minutes and added that to the stockpot.
I added 2 cans of diced fire roasted tomato's for some chunkiness
and then right at the end I add the heavy cream
I cooked to a simmer and served
a little salt and pepper to taste and I added some cracked Red Pepper for a kick
I made some garlic croutons from leftover bread, margarine and granulated garlic, threw them in the oven to brown and they were on the side to add.
The sandwich which is featured in the cook book I highly recommend the cookbook, its not your typical cookbook its the entire package in one, gives you recipes not only for the sandwich but the condiments, and the bread, it covers breakfast, lunch, dinner, and desert...along with a lot of Vegetarian options. I can't share the recipe for the sandwich if you want that you need to order the new cookbook, I promise you your not going to be disappointed, and for all my firehouse cooks out there, Great ideas for lunches and dinners at the firehouse from simple to complex...
This is definitely an addition to any firehouse for a meal, and If you like the dip you'll loveeee the sandwich!
